I was introduced to this fabulous BBQ sidedish by some friends while vacationing in the Hamptons earlier this Summer. Deceptively simple, this refreshing healthy salad comes together in a snap from only 4 ingredients. The result is a delicious exercise in contrasts…sweet & salty, creamy & crisp. Really surprisingly good.
I served this particular salad at a Texas BBQ held in my home for of the American Women for International Understanding. AWIU is a great organization that brings women throughout the United States together to engage in and encourage people-to-people contact throughout the world.

Watermelon, Feta, Red Onion & Cilantro Salad
- 1 watermelon cut into chunks
- 6-8 ounces of crumbled feta cheese
- 1 red onion chopped
- two handfuls of chopped cilantro (or to taste)
Layer all the ingredients in your serving bowl. Refrigerate until ready to serve then toss quickly and eat. Yummy!!
This is a delicious recipe!! It was a perfect accompaniment to our chicken tacos. I am amazed that four ingredients can result in such complex flavor combinations. I love the salty and the sweet, the creamy and the crisp. This dish will make regular appearances for our summer meals. My daughter assembled the salad and decided to cut the watermelon into larger chunks than your picture shows. She thought the watermelon looked more like tomatoes to her, and she preferred a clearly melon visual image.
I came across the feta-watermelon taste combination accidentally on my baby daughter’s high chair tray and loved it; a few web browser navigation later I found and replicated this potent and refreshing recipe.
Now with bowl in hand, I am faced with the ethical question of whether to share this with the rest of the family or eat it all myself…
