Let me be clear.  When I was a kid, I didn’t like bourbon balls.  Yuck!  But I’m all grown up now and I’ve developed a certain appreciation for baked goods flavored with alcohol…and main dishes…and cocktails.  So now I’m a Mom and a grownup and I’m feeling nostalgic for those things I had as a kid, even those things I didn’t like.

Chocolate Bourbon Balls

  • 4 cups cake crumbs
  • 4 cups powdered sugar, divided
  • ½ cup cocoa powder
  • ¼ teaspoon kosher salt
  • 2 cups chopped toasted pecans
  • ¾ cup bourbon
  • 2 tablespoons light corn syrup

Place the cake pieces in the food processor and process into fine crumbs.  Place the crumbs in a large bowl with 3 cups of the powdered sugar, cocoa powder, kosher salt, chopped pecans.  In a smaller bowl, combine the bourbon and corn syrup.  Add the liquid to the dry and mix until homogenous.  Refrigerate for 30 minutes or more to firm up.  Roll into tablespoon-size balls and then roll in the remaining cup of powdered sugar.  Store in a tight tin in the fridge for at least a week before serving to allow the bourbon balls to “mellow”.  Reroll in powdered sugar right before serving for best appearance.
