The inspiration for this quiche came from a Christmas trip to Australia and the ubiquitous “pumpkin” quiche that was so popular there. We put our own spin on it to make one our most delicious vegetarian quiches. We start with buttery oven-roasted squash, bright green spinach, creamy goat cheese, caramelized onions & toasted pine nuts. Then we add fresh local pasture-raised eggs, whole milk and a touch of cream to make this luscious vegetarian quiche. You and your guests are going to love it.
